Onion Spinach Miso Soup

1 teaspoon unsalted cultured butter1 sliced medium yellow onion1 cup fresh spinach1 teaspoon South River Azuki Bean Miso paste1 cup of water
Saute onion in butter in heavy pan until golden, cover and simmer on low heat for 20 minutes. Add spinach and stir until wilted. Add 1 cup of water and bring to boil, remove from heat. Separate 1/4 cup of broth and allow to cool, then mix with miso paste. Allow veggies & broth to cool to eating temp, then mix in miso and enjoy!
