Couscous Salad

Ingredients
1 cup dry Rice Select Organic Whole Wheat Couscous2.25 cups water1 cup of sun-dried tomatoes, chopped fine1 peeled cucumber chopped into small pieces1 onion chopped into small pieces5 oz. Athenos Fat-Free Feta Cheese2 tbsp. Balsamic Vinegar2 tsp. olive oil1 tsp Herbs de Provence
Directions
Boil the water, add the couscous. Cover the couscous pot and remove from heat. Chop the cucumber, onion, and sun-dried tomatoes and add to the couscous. In a separate bowl mix together the balsamic vinegar, olive oil, and herbs de provence.
