rhubarb-cherry crumble

CRUMBLE1 cup oatmeal1 cup packed brown sugarpinch of salt1 cup all-purpose flour1/2 cup butterFILLING4 cups diced rhubarb1 cup sugar1 cup water2T corn starchfew drops of red food coloring(opt)1t almond flavoring (or vanilla)1 can Cherry Pie Filling1/2 cup chopped nuts (NOT included in calorie count)
PreHeat oven to 350. Mix all crumble ingredients together and cut in butter. Press half of the crumble into the bottom off a 9x13 pan. Sprinkle rhubarb on top of "crust" In medium saucepan, mix water, sugar and cornstarch. Bring to a boil while stirring. Boil about one minute or until mixture is thick. Remove from heat and add coloring, flavoring and pie filling. Stir well. Spoon over rhubarb. Sprinkle remaining crumble on top and sprinkle with nuts if desired. ( Nuts are NOT included in calorie count). Bake for 45 minutes. Cool before cutting.
