vegan collard greens with vegan corn bread

Ingredients
greens1/2 small yellow onion diced 3 cloves garlic, minced2 cups of vegetable stock1/2 teaspoon red pepper flakes2 lbs. collared greens1 teaspoon black pepper 1/2 cup red vinegar corn bread 2 tabl ground flax seeds6 teaspoons water1 cup cornmeal1/4 cup of brown sugar in the raw2 teaspoons baking powder1 cup soymilk1/4 cup coconut oil
Directions
greens
1 coat a large deep skillet or pot with oil
2 saute onions until almost tender over medium heat add garlic cook for 2-3 min
3 add vegetable broth the seasoning and vinegar
4 bring to a simmer then reduce heat
5 add greens simmer for 1 hr. add more broth if needed greens serves 4 /5
corn bread
mix all ingredients in a large bowl
pour into oiled pan

for 15- 30 min cornbread serves 9
