Easy-Does-It Black Bean Soup

Ingredients
1 tablespoon olive oil1 large yellow onion, minced1-3 cloves of garlic, minced1 teaspoon ground cumin2 teaspoons chili powder1 16-oz can low-salt vegetable broth2 cans cooked black beans, drained2 tomatoes1 sweet onionFresh jalapeno pepper
Directions
In a large saucepan heat olive oil and sauté onion for about 10 minutes or until soft. Add garlic to taste, cumin and chili powder.

Add beans and vegetable broth. Bring to a boil, lower the heat, and simmer until flavors are combined, about 20 minutes.

After soup has cooled, divide into 6 containers and top with pico di gallo.
