Winter Soup

Ingredients
Raw medium potato, 1 cup raw chopped carrot (see photograph)50g raw swede350 mL cold waterA pinch of dried (or fresh) thymeA few twists of freshly ground black pepper - or just a dash of pre-ground to taste3g grated cheddar cheese
Directions
This is so easy. Cut the potatoes, carrots and swede into chunks. Add the preciously cooked onion, cold water and a sprinkling of herbs. I like the flavour of thyme, but you can change or add something else if you wish. Bring to the boil and simmer until cooked. It won't take long.

Now use a potato masher to break up the pieces. Sometimes I leave it like this, sometimes I whizz it in the blender to make it smooth - variety is the spice of life ;)

To serve - add half the grated cheddar cheese to the bottom of each serving bowl and add the soup. The cheese will melt giving a marbled appearance and adding just a little flavour.

Serving Size: Makes two bowlfuls.
