1-Flat out Whole grain flatbread1/4 c. tomato sauce with 1/4 t. Italian seasoning blended2 oz. deli ham, diced3 oz. Finely shredded Colby/Monterrey Jack cheese1/2 c. mushrooms, sliced or diced1/2 c. bell peppers, sliced or diced (I used baby bells)1/4 c. onion, sliced or diced6 grape tomatoes, sliced in quarters
Preheat oven to 375 degrees. Saute the vegetables, except the tomatoes, until mostly done, but still a little crunchy. Spray a cookie sheet with cooking spray (I use olive oil). Put the flatbread on the pan, add the tomato sauce blend and cover the entire surface of the bread. Sprinkle the cheese on top of the sauce, reserving 1 oz. for the top. Sprinkle the ham as evenly as possible over the top of the cheese, then add the vegetables to the top of the ham. Sprinkle the rest of the cheese over the top of the veges and top with a sprinkle of Italian seasoning and the grape tomatoes. Bake for 8-10 minutes on the top rack of the oven.
