White Bean and Tuna Pasta Salad

Ingredients
4 oz uncooked whole-wheat pasta (I used Dreamfields Healthy Carb Living Rotini)1/3 cup fat-free chicken broth1/4 cup red wine vinegar1.5 Tbsp extra virgin olive oilsalt to tastefreshly ground black pepper to taste1 cup canned Great Northern or Cannellini beans, drained and rinsed6.5 oz roasted red peppers, water packed, drained and cut into 1-inch pieces1/2 cup red onion, diced1/3 cup fresh parsley, chopped2 5-oz cans of water-packed tuna fish, drained1 Tbsp capers1 Tbsp lemon zest, or to taste
Directions
Cook pasta according to package directions. Drain and rinse under cold running water, drain again.

In a large bowl, stir together broth, vinegar, oil, salt and pepper until blended. Add cooked pasta, beans, roasted peppers, onion and parsley; toss to mix and coat.

Break tuna into bite-size pieces and add to bowl; toss to mix. Add capers and zest; gently mix. Yields about 1-1/2 cups per serving.
