Cook Yourself Thin Shrimp Mango Tacos - Modified

Ingredients
Mango Salsa:1 cup of mangos, diced1/2 red onion, diced1 jalapeņo, deseeded and dicedJuice of 1/2 limefresh cilantro, chopped finely Black Bean mix:1 can of black beans, drained and rinsed1 can of corn, drained and rinsedpinch of cuminShrimp:12 Shrimps, peeled and devainedpinch of cuminpinch of red pepper1 tsp of olive oilpinch of chipotle seasoning1/4 cup of water (or tequila if you can flambe)3 Whole Wheat Tortillas
Directions
In a small bowl, combine the mango, jalapeņo, onion lime juice and cilantro. Set aside.

In a small saucepan, add beans and corn with a dash of cumin. Stir to combine, cook for 3-4 minutes and set aside.

In a pan, add oil and garlic and let cook for 1 minute. Add shrimp, red pepper, cumin and seasoning. Cook until shrimp are opaque. Add the liquid and cook for another minute.

Assemble taco with 1 tortilla, 3 shrimp and mango sauce. Serve black bean mix on the side.
