Tuna Noodle Casserole

3 Cups medium Egg Noodles3 Tbl EVOO (Extra Virgin Olive Oil)1/4 Cup Chopped Onion1 Cup Chopped Celery1/4 All Purpose Flour1 Cup Non-Fat / Skim Milk1 Cup Chicken Broth1 Large Can of Tuna packed in Water1/4 Cup of Peas (Frozen or Canned)1 Tbl Melted Butter or Margerine1/4 Cup fine dry bread crumbs
Cook Noodles according to package directions.
Drain and set aside.
Sauce: heat the olive oil, celery and onions until tender. Stir in the flour. (make a roux)
Add milk and chicken broth. Cook until thick and bubbly. Optionally, sprinkle some Lemon-Pepper to taste.
Topping: combine melted butter and bread crumbs.
Combine the Sauce, Peas, Tuna and Noodles and transfer to a 1 1/2 Quart casserole dish. Sprinkle the bread crumb and butter mixture over the top of the casserole.
Bake uncovered for 20 minutes in a 375 degree oven or until top is golden brown and casserole is bubbly.
