Rainbow Trout Provencale (white wine butter sauce)

Ingredients
4 Rainbow Trout Fillets2 T. Smart Balance (or butter)1 bell pepper, julienned (or 1.5 cups of your favorite vegetables that soften when you saute them.)2-3 cloves garlic, finely chopped1/2 med. onion, cut into strips6 T. dry vermouth or white wine2 T. Tomato paste or Ketchup2 T. fresh parsley, chopped (or favorite herb)Salt and pepper
Directions
- Preheat oven to 300 degrees
- Combine the butter, bell pepper, onion and garlic in a pan and saute well, about 5 mins. or until everything has softened and browned. Stir in wine, tomato paste, and parsley (or herb). Season with salt and pepper. Pour into baking dish.
- Place trout fillets (meat side down) on vegetable mixture in baking dish. Cover and bake for about 20 mins. or until flaky.

Serve with rice or pasta or bread, whatever you prefer to absorb the a-maz-ing sauce and enjoy!
