Quick Lemon-Vanilla Gluten-Free Sugar-Free Muffins

Ingredients
2 cups Pamela's Ultimate Baking and Pancake Mix (gluten-free)1/3 cup steel cut oats1 egg (or 2 egg whites).25 cup unsweetened applesauce (can use a single serving from a 6 pk)1 cup Splenda Sugar Blend for Baking1/2 cup waterLemon extract - 3 lidfullsVanilla extract - 1 lidfull12 paper cupcake linersmuffin pan
Directions
Set oven at 350 degrees.

Mix flour, oats, egg, applesauce, splenda, water, and extracts until smooth. Add a few spoonfuls of water until it mixes smoothly, if necessary.

Scoop into 12 cupcake liners in a muffin pan and bake for 20 minutes.
