Fresh Mint Watermelon Salad

Ingredients
1/2 cup chopped red onionjuice of 2 limes8 cups of seeded watermelon3 TBS fresh mint chopped1/4 cup fresh chopped parsley1/4 to 1/2 cup pitted kalamata olives2 oz reduced fat feta cheese
Directions
Place red onion in bowl and pour lime juice over it. Let stand 20 minutes. Meanwhile cut watermelon and place in large bowl. Add chopped mint and parsley. Add the onion and lime juice. Mix well and refrigerate for about 60 minutes if you have the time. Just before serving add the olives and feta. Stir and serve.
