1/2 English cucumber, peeled and diced1 ripe tomatoes, seeded and diced1 roasted red pepper, peeled, seeded and diced1 small red onion, dicedA spoonful of olive oilA squirt of lemon juicepepper to taste
Directions
Toss the diced vegetables (Vegetable sizes vary, so with this in mind, adjust quantities to suit your taste.) Season to taste at the last minute with olive oil, lemon juice and pepper.
