Brown rice prepared 1 (16 oz) can of black beans rinsedone small red onion sliced thinone large red bell pepper sliced thinone large green pepper sliced thinginger dicedjuice of 2 limesa mango diced1 tbs of fresh cilantro
Whille you are preparing your brown rice.
In a large skillet spray bottom of pan with Pam. Sautee the onions until transparent. Add ginger and sautee for about 30 seconds until you can smell the ginger. Add peppers and cook until done. Add the can of black beans, sautee until mixed well and heated throughly. Add the juice of the limes. Add the rice when completed and sprinkle the top with cilantro.
