Bourbon Chicken, Rice and Veggies

Ingredients
2 pounds boneless chicken breasts; cut into bite-size pieces1 tablespoon olive oil1 garlic clove; crushed1/4 teaspoon ginger3/4 teaspoon crushed red pepper flakes1/4 cup apple juice1/4 cup splenda brown sugar2 tablespoons ketchup1 tablespoon cider vinegar1/2 cup water1/3 cup soy sauce1 tablespoon cornstarch; (if thick sauce desired)4 Tbsps Siracha2 packages, 90 second brown rice2 bags, frozen steam veggies
Directions
Heat oil in a large skillet.

Add chicken pieces and cook until lightly browned.

Remove chicken.

Add remaining ingredients, heating over medium heat until well blended and dissolved.

Add chicken and bring to a hard boil.

Reduce heat and simmer for 20 minutes uncovered.

Microwave rice and veggies, mix into skillet
