Slow-cooked Lamb stew (SCD)

Ingredients
1 lamb shank weighing about 400g/14oz300ml/1.25 cups stock150g carrots, peeled & sliced100g mushrooms, chopped1 tbsp fresh mint or 1 tsp driedsalt & pepper to taste
Directions
Preheat the slow cooker. Heat the stock and add to slow cooker along with lamb shank,carrots and mushrooms.
Season to taste. Cover and leave to cook for 8 hours or overnight.
