Scallops Al Fredo for Two

8 oz. scallops2 tsp. butter2 tsp. flour1/3 cup skimmed milk1 tbs. Romano cheese, grated2 Ritz Cracker crumbs
Using the microwave, melt butter in small baking dish (pint size). Stir in two teaspoons of flour and add skimmed milk. Whisk smooth. Add Romano cheese, mix thoroughly. Add salt and pepper if desired.
Add scallops to al fredo sauce and stir to cover. Crush two Ritz crackers with a rolling pin. Sprinkle crumbs over top.
Bake in 350 degree oven for 30 minutes.
