Salmon Cakes

Ingredients
1 lb fresh salmon fillets1/2 cup green onion or fresh chives1/2 cup plain bread crumbs1/2 cup egg substitute or 1 egg2 to 3 TBS lime juice or lemon1 1/2 TBS caper rinsed and chopped1 TBS fresh parsley or 1 tsp dried1 TBS fresh dillweed or 1 tsp dried1/2 tsp paprika1/4 tsp pepper1/4 tsp dry mustard1/8 tsp cayenne or to taste1 TBS acce[table vegetable oil
Directions
Rinse fish and pat dry with paper towels. Steam fish for 6 to 8 minutes, or until it flakes easily when tested with a fork. Cover and refrigerate until cool.
Flake fish, checking to be sure all bones have been removed.
In a medium bowl add the rest of the ingredients except the oil, stirring to combine.
Add salmon and stir gently.
Divide into 8 patties.
Om a large nonstick skillet, heat oil over meduim high heat, swirling to coat the bottom. Saute the pattie for 3 to 4 minutes, turn, and saute for 3 to 4 minutes.
Serve with steamed asparagus and corn on the cob.
