Creamy cilantro salad dressing

1 medium Anahein chile, roasted, peeled and seeded1 1/2 oz roasted pepitas (pumpkin seeds)1 garlic clove, peeledblack pepper to taste1/2 TSP salt6 oz olive oil2 TBSP red wine vinegar2 1/2 TBSP cotija cheese (or parm)1 bunch fresh cilantro, stemmed.75 cups Greek yogurt - plain2 TBSP water
Place all ingredients except cilantro, yogurt and water in a blender or food processor.
Blend about 10 seconds, then add cilantro little by little until blended smooth.
Put yogurt and water in a large stainless steel bowl and mix with a wire whip until smooth.
Add the blended ingredients to the yogurt mixture and mix thoroughly.
Place in airtight container and refrigerate - it will keep for up to 3 days.
