Vegan Banana Bread with Coconut

Ingredients
1/2 cup vegan shortening1 cup granulated sugar1/2 cup unsweetened applesauce1 cup mashed banana (about 2 medium)1 tsp lemon juice3 tsp baking powder (or 1 tbsp)1/2 cup whole grain flour1-1/2 cup enriched wheat flour1 cup shredded coconut
Directions
Cream buttery spread (shortening) and sugar in a mixer.

Mash bananas in a bowl, then add the applesauce and lemon juice; stir until well blended. Add this mixture to the shortening/sugar mix.

Blend flour and baking powder into a small bowl. Add coconut. Slowly add these dry ingredients into the liquid ingredients.

Spray a 1-pound loaf pan with olive oil cooking spray (adds a negligible amount of fat) and flour the pan (keeps the bread from sticking).

Bake at 325 degrees F for 1-1/4 hours. Remove from pan to cooling rack immediately.

Serving Size: Makes about 10, .9-inch thick slices
