Summer Salad with Peaches and Goat Cheese

1 tablespoon olive oil 1 tablespoon chopped shallot 2 teaspoons red wine vinegar 1/2 teaspoon honey 4 cups mixed baby greens handful fresh herbs (basil, parsley, or tarragon) 1 peach, pit removed and sliced 1 ounce soft goat cheese
Combine the first four ingredients in a large bowl. Add the greens and toss well to combine.
Place on a salad plate and top with the herbs, peaches, and goat cheese.
Season with black pepper.
Serving Size: 1 salad as an entree or 2 as an appetizer
