5 cups cooked black-eyed peas without salt1 cup liquid egg whites 1/2 cup raw wheat germ1 cup unbleached flour4 tsp baking powderSeason to taste with onion powder, garlic powder, salt, and black pepper4 cups oil for frying (entered in nutrition information as an estimated 1 tbsp oil per serving, though since it doesn't take long to fry, I imagine it could be less. I prefer to over-estimate.)
Mash up black-eyed peas with potato masher. Add in egg whites, flour, wheat germ, seasonings, and blend together well with an electric mixer. Heat oil to 350 degrees F. Fry in small batches by the heaping tablespoon, until bronzy in color. They will fluff up. Drain on a wire rack set on paper towel.
