Pink Lemonade Cake

1 reduced fat graham cracker pie crust8 oz fat-free cream cheese3/4 c. pink lemonade concentrate (not mixed with water)14 oz fat-free sweetened condensed milk2 tbsp lemon juice1/3 c. reduced fat unsweetened coconut, shredded1 c. Cool Whip Free
Beat cream cheese and condensed milk with a handheld mixer on low until softened.
Add pink lemonade and lemon juice, and beat for another 45 seconds until smooth.
Pour mixture into pie crust.
Spoon whipped topping and sprinkle with coconut.
Freeze until firm.
Serving Size: Makes 8 slices.
