One Pie Crust5 Eggs2 Cups Shredded Colby Cheese1 Package spinach, frozen1/2 Cup Canned Mushroom Pieces1 small onion (about 3/4 cup)
Thaw and drain spinach. Squeeze out extra water. Drain canned mushrooms. Mix all ingredients together and pour into pie crust. Bake at 375 for 45 minutes or until top turns slightly golden brown.
You can substitute egg beaters for eggs. I like to keep my chemical intake to a minimum, so I don't mind eggs.
