Cheese, spinach and zucchini omelette

Ingredients
3 large Egg, fresh, whole 1/2 C. Egg Beater Liquid Egg Whites(remove) 1/4 C. Cheddar Cheese Low Fat Shredded 1 TB. Low fat cream cheese 1/2 Cubic inch Feta Cheese, crumbled 1/2 c. Spinach, fresh, .5 cup (remove) 1/2 c. chopped Zucchini 1 tsp ghee salt & Pepper to taste
Directions
mix eggs and cheeses together. Set aside
Saute the vegetables in a tsp ghee, and add to the omelette. Microwave on power level 7 for about 3-4 minutes, or till firm. Sprinkle with paprika
Serve immediately
