Energy Bites

Ingredients
1 cup of oats1/2 cup natural peanut butter (or almond butter)1/2 cup ground flax seeds (you can grind your own or buy them ground)1 cup of organic toasted coconut (I used shredded & toasted myself) (you can omit if you don't like coconut and add an extra 1/3 cup of oats)1/2 cup of organic honey or organic maple syrup1/8 cup cocoa powder (more if you like really chocolate taste)1 teaspoon vanillaHeavy dash of cinnamon (to your taste)
Directions
Mix it all together in a bowl. Put in refrigerator for about 20 minutes. Take it out, wet your hands (won't stick) and roll into small balls. Refrigerate for an hour, then put in an airtight bowl and keep in the refrigerator!
