Cabbage Roll Casserole

12 oz lean ground chicken 1 medium yellow onion, chopped 2 cups no sodium added tomato sauce1 medium head green cabbage, chopped1/2 cup instant white rice, prepared1 cup low sodium beef broth
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet, brown chicken in oil over medium high heat until cooked through. Drain off fat.
3. In a large mixing bowl combine the onion, tomato sauce, cabbage, and salt. Add meat and mix all together.
4. Pour mixture into a 9x13 inch baking dish. Pour 1/2 cup broth over meat mixture and bake in the preheated oven, covered, for 1 hour 15 minutes.
5. Meanwhile, prepare rice using directions on box, substituting beef broth for the water. Set aside.
6. Remove casserole from oven; stir. Replace cover and bake for another 15 minutes.
