Mashed Potatoes Lookalike (Mashed Squash and Turnip)

Ingredients
- 1Turnip, chopped into same size pieces- 1Butternut squash, chopped into same size pieces (or a sweet potato/yam, or 2 regular potatoes)- 2 Tbsp Soy Garden natural buttery spread, or equivalent
Directions
Chop turnip and other root vegetable(s) into same-size pieces. Place all together in steamer and steam over high heat until soft and ready to mash. Drain, return to pan and mash together with buttery spread, peels and all. The peels add nutrients and taste good, and the turnips retain enough moisture that they will make the mixture creamy, so you don't need to add any milk or cheese (although, cheese would be good too!).

The fat in this recipe is all the margarine. To take out the fat, take out the margarine.

Salt and pepper to taste and serve. Makes 4 1-cup servings.
