DRY INGREDIENTS3 cups Meijer Whole Wheat Flour (372g)1 tsp Motron Lite Salt (5.6g)1 tsp Baking Soda1 tsp Baking Powder3 tsp Ground CinnamonWET INGREDIENTS1 Large Egg6 tbsp Egg whites (egg beaters) (92g)1 cup Unsweetened Applesauce (248g)1 1/8cups Truvia Sweetner (248g)3 tsp Vanilla ExtractOTHER INGREDIENTS2 cups Grated Zucchini (300g)1 cup Walnuts (optional & not calculated here)
Spray 8X4 inch pans with cooking spray, and springle with flour. Preheat oven to 325. Mix dry ingredients in large bowl, set aside. Beat at medium speed wet ingredients until blended. Beat in dry ingredients until well blended. Stir in zucchini (and optional walnuts). Pour equal amounts into the two prepared pans. Bake at 325 for 40 to 60 minutes. Bread is done when a toothpick comes out clean.
