one large marrow3large onions1kg of bacon ends2 large tins of chopped tomatoes1 vegetable stock pot "optional" water if needed optional
skin, deseed and chop the marrow small to medium pieces
peel and chop the onions or thin slices
chop the bacon ends
put into a large pan
pour over the tinned tomatoes
bring to the boil ,then simmer until bacon and marrow cooked through, at this stage you can add water if too dry but not too much to alter the taste
if the bacon does not have enough flavour you can add a stock cube and season to taste.
for a vegetarian option just omit the bacon and add the stock cube for extra flavour.
Serving Size: makes 6 to 8 portions or more depending on size
