Curried Cauliflower

Ingredients
2 tablespoons olive oil1 tablespoon lemon juice1 tablespoon curry powder½ teaspoon kosher salt2 (12 oz) packages fresh cauliflower florets¼ cup chopped green onions
Directions
Preheat oven to 425 degrees. Whisk together
olive oil, lemon juice, curry powder and salt in a
large bowl. Add cauliflower and green onions;
toss to coat. Spread in a single layer on a large
rimmed baking sheet. Bake 20 to 25 minutes or
until tender and browned.
