Mongolian Beef (Crock Pot)

Ingredients
1.5 pounds round steak, all fat trimmed1/4 c cornstarch1 medium onion, sliced thinly3 carrots, sliced thinly1/2 t ginger, minced3 cloves garlic, minced3/4 c soy sauce1/2 c water1/4 c dry sherry3/4 c brown sugar1/4 t black pepper
Directions
Toss beef strips in cornstarch and set aside.
Mix remaining ingredients in crock pot and place beef over top.
Cover and cook for 6-8 hours on low.
Gently stir beef into sauce and serve over rice.
