Grilled Peach and Blackberry Salad

8 cups arugula2 ripe peaches (about 1 pound), washed and cut into thick slices1/4 teaspoon honey1 tablespoon white wine vinegar1 tablespoon vegetable oil1 cup blackberries1 ounce parmesan cheese, grated
Place the arugula in a large salad bowl.
Preheat a grill to medium. Grill peaches for two minutes per side, then immediately toss with the arugula.
In a small bowl, combine the vinegar and honey, then whisk in the oil.
Pour the dressing over the greens, and toss to coat.
Garnish with the blackberries and cheese.
Serving Size: Makes 4 servings, 2 cups per serving
