Cider-Glazed Stuffed Chicken

Ingredients
6 thin chicken breast halves (1/4" thick)1 6 oz pkg Stove Top Chicken(I used Whole Wheat)2 Cups Apple Cider1/4 cup (4 tbs spoons) butter spray1 stalk celery, minced2 medium apple, peeled and chopped 1/4 teaspoon paprika3 tbs brown sugar
Directions
heat over to 350.

Combine stuffing mix, 1.5 cups cider and 1 tbs butter in microwavable bowl; cover with wax paper. Micro on high 5-6 min or until heated through. Fluff with fork. Add minced celery and half the apples, mix lightly.

Spray 13 x 9 baking dish w/ non-stick spray.
Place chicken, top side down, on cutting board; spread with stuffing. Roll up, starting at one short end of each breast. Place seam side down in baking dish. Combine 1 tbs butter spray with paprika. Brush onto chicken.

Bake 40 min (until chicken is cooked through). Transfer chicken to platter and cover to keep warm.

Combine 1 tbs butter in skillet - med-high heat) with sugar, remaining cider and apples. Cook 5-6 min (until thickened, stirring frequently). Remove from heat. Stir in remaining butter. Pour over chicken.

Serving Size: makes 6 servings - 1 chicken ea.
