Lemon Blueberry Oatmeal Bread

1 Cup Old fashioned oats1/2 Cup Oats {blend in food processor to make flour}1 Cup All purpose flour1 1/2 Tsp Baking powder1/2 tsp Baking soda1/4 tsp Salt1 3/4 Cup Plain yogurt6 Tbs Egg Beaters3/4 Cup Sugar Replacement1 Cup Blueberries1 1/2 tsp Lemon Zest3 Tsp Flax seed Powder (optional)1 Tablespoon Oats for topping (optional)
DIRECTIONS
Preheat oven to 350 degrees.
Line the baking pan with parchment paper or spray with oil
In a bowl, mix together the oats, oat flour, all purpose flour, baking powder, baking soda, sugar and salt.
Add about 2 tablespoons of this mixture to the blueberries. This is to ensure that the berries dont sink to the bottom of the bread.
In the stand mixer bowl, add yogurt and eggs.
Add the dry ingredients to the wet mixture in 3 batches and mix until everything is well incorporated.
Gently fold in the blueberries and lemon zest
Pour batter into the prepared bread pan and sprinkle about 1 tablespoon of oats on top
Bake for 55-60 minutes or until the inserted toothpick comes out clean.
Let cool for 15 minutes then take the bread out of pan; allow it to cool on a cooling rack.
