Whole Grain Carrot Apple Walnut muffins

1 1/2 c whole wheat flour1/2 c ground/crushed flax seeds3/4 c oats1 c brown sugar2 t baking soda1 t baking powder1/2 t salt2 t cinnamon3 small carrots, shredded (about 1.5 cup)1 medium apple shredded (about 3/4 cup)1/4 c walnut chopped3/4 c nonfat milk2 large eggs1 t vanilla
1. Prep: preheat oven to 375 degrees, line muffin tins with papers or grease and flour (as desired)
2. Combine dry ingredients
3. Beat eggs lightly, add other liquid ingredients, including apple and carrots
4. Fold wet ingredients into dry, mixing gently with a spoon or spatula until batter is uniformly moist
5. Spoon batter evenly into muffin tins
6. Bake 18-20 minutes
7. Enjoy!
