Cabbage and Bean Soup

Ingredients
2 lbs. Ground Beef10% lean2 cups Onion (1/4" dice)1 cup Celery (1/4" dice)1 cup Carrot coarsely grated48 oz. Diced Tomatoes-canned2 cups Red KIdney Beans-canned (rinsed)2 cups Cannellini Beans-canned (rinsed)2 cups Black Beans-canned (rinsed)88 oz Beef Stock (not broth)3 tsp Oregano2 1/2 tsp Black Pepper2 tsp Tabasco Sauce- or your favorite48 oz. Spaghetti Sauce-jarred or canned
Directions
Brown the ground beef and season to taste. Add onion, celery, carrot and simmer 5 more minutes. Add remaining ingredients, except cabbage and simmer uncovered for 45 minutes. Add cabbage and simmer an additional 15 minutes or until tender.
