Banana Nut Bran Muffins

1 cup wheat flour1 tbsp baking powder1/4 cup sugar1/2 tsp cinnamon1/2 tsp nutmeg2 cups bran flake cereal1/3 cup fat free milk1 cup very ripe bananas, mashed2 large egg whites1/4 cup salted butter1/2 cup chopped walnuts
preheat oven to 400 f
combine flour, sugar, cinnamon, nutmeg, walnuts, and baking powder into large bowl. In a separate bowl combine bran flakes, milk and bananas, let sit for a moment to soften cereal. In separate bowl beat egg whites until frothy, then beat in softened butter, then add the rest of the ingredients to eggs and butter. beat everything together for about 1 minute.
scoop muffin mix into muffin tin. makes 12 muffins
bake at 400 f for 18-20 minutes.
Serving Size: makes 12 (2-1/2 inch) muffins
