1/2 cup Splenda brown sugar blend2 Tbsp unsalted butter, melted, cooled2 Tbsp unsweetened applesauce2 egg whites1 tsp rum extract1 cup flour1 tsp baking powder1/4 tsp salt3 Tbsp unsweetened shredded coconut3 Tbsp white chocolate chips
1. Preheat oven to 350 degress. Lightly spray an 8″ x 8″ baking pan with cooking spray and set aside.
2. In a medium mixing bowl, whisk together the flour, baking powder and salt.
3. In a large bowl, combine the butter, applesauce and sugar with a wooden spoon. Add egg whites and rum extract. Stir until all smooth.
4. Slowly add the flour mixture to the egg mixture. Stir until well combined. Fold in the coconut and chocolate chips and pour the batter into the prepared pan.
5. Bake for 25 - 28 minutes. Allow bars to cool before slicing.
