Easy Gluten Free Chicken Stir-Fry

Ingredients
2tbsp extra virgin olive oil1tbsp sesame oil (optional)2 boneless, skinless chicken breasts cut into 1/2 inch pieces2 (12oz) bags fresh stir-fry vetables or 3 cups of your choice1/2 medium onion thinly slicedSauce1 cup chicken broth (gluten free)2tbsp gluten free soy sauce1/2 tsp powdered ginger1/2 tsp garlic powder2 tbsp cornstarch
Directions
In a large skillet, heat oils over medium-high heat
Add the vegetables and onion and cook for 3-5 minutes stirring often
Remove vegetables to a seperate bowl
Add the chicken to the skillet and cook for 4-5 minutes or until lightly browned
Return vegetables to the pan with the chicken and cook fo 2-3 more minutes until slightly softened, but crispy.
Combine sauce ingredients and add to the chicken mixture in pan.
Bring sauce to a boil and then reduce to medium or medium low and simmer about 4 mins or until sauce thickens.
Stir well to coat the meat and vegetables with the sauce
Serve immediately over hot cooked rice.
