Chicken Liver Spread

1 lb. fresh chicken livers3 to 4 cups low fat chicken broth1 cup white onion, finely minced1 sm. jalapeno pepper, finely minced1 hard boiled egg2 tbsp. unsalted butter1 tbsp. dried oregano1 tsp. poultry seasoning1 tsp. salt(to taste)1 tsp. black pepper(to taste)1 tsp. smoked paprika
Rinse chicken livers. Place in pot. Cover with broth. Boil livers 8 to 10 minutes until done.
Mince onion and jalapeno pepper. Sauté onion and pepper in butter until lightly browned. Set aside.
Drain livers and save broth. Mash livers. Finely mash boiled egg and mix with mashed livers. Add sautéed onions and peppers with melted butter to liver mix. Add remaining ingredients. Add 1/4 cup of broth and mix to form "firm" paste. Adjust seasonings to taste.
Serving Size: Makes 12- 2 tablespoon servings.
