1 Nori wrapper1 cup cooked brown rice1 tsp. rice vinegar1 pkt. Truviapinch of ginger3 oz. cooked and cleaned shrimp, tails removed2 long strips each; cucumber avocado yellow pepper Red PepperFor the sauce;1 tsp. Sriracha or hot sauce1 tbsp. soy sauce1 tsp. agave nectar1 tsp. rice vinegarpinch of gingerfew drops of sesame oil
Mix the sauce. Cool the brown rice and mix in; vinegar, truvia and ginger. Set aside. Place Nori wrapper half on a sushi mat lined with plastic. Layer the carrots and vegetable strips. Roll tight. Refrigerate. Place a new piece of plastic on the sushi mat and place the rice in a single long rectangle big enough to cover the refrigerated roll. Place the refrigerated roll onto the rice and roll tight. Cut into 9 pieces. Serve.
