for pancakes:1 cup Pamela's Gluten-Free baking mix1.5 tbsp coconut oil (semi-solid)1.5 tbsp lemon curd3 tbsp finely shredded unsweetened coconut flakes1 egg1 cup vanilla-flavored coconut milk dairy-free beveragefor topping:maple syrupmixed berries, frozen (thawed)butter
Directions
pancakes: mix batter ingredients until well blended. cook on griddle over medium heat.

sauce: put the berries, syrup and butter in a saucepan over low heat. cook until warm through.
