Mom's Zucchini Casserole

2 c diced zucchini2/3 c long cook rice1 onion, small, chopped1-2 eggs1 oz Velveeta Salt & Pepper to tasteWater (for rice, I use instructions on bag)
In a 2 quart saucepan cook zucchini, rice, water and onion until done. Add butter and cheese. Beat egg(s) in a bowl and add a little of the rice mixture to egg to temper. Mix into zucchini mix. Microwave for 5 minutes, stir and microwave for another 3 minutes.
