Turkey Vegetable Meatloaf

Ingredients
Mix wet ingredients:1 beaten egg1 5.5 oz can of Low Sodium V-8 juiceAdd:1/2 cup onion, chopped1/2 medium red pepper, chopped1/2 cup mushrooms, chopped1 lb ground turkey meat, 93% leanSeason with:1/2 tsp Cajun seasoning blend1 T low-sodium soy sauce
Directions
Beat egg. Add V-8 juice, then all other ingredients. Mix with hands. Pat into 8" x 10" pan to make a shallow loaf. Bake in preheated 375 degree oven for 50 - 60 minutes until browned. Let sit for at least 5 minutes before slicing.
