Potato, raw, 1 large gratedHillshire Farm Turkey Smoked Sausage, 8 ozOlive Oil Cooking Spray, 2 serving about 1 second sprayOnions, raw, 1 medium dicedGarlic, 2 clove or more to tasteChicken Broth, 4 cup Kale, 4 cup, stemmed & choppedSalt, 1/2 tspPepper, black, 1/2 tspTobasco Sauce to taste
Spray a large saucepan with nonstick cooking spray, set over medium heat. Add diced onion, cook, stirring often until soft. Aout 5 minutes. Add the garlic and cook a few seconds more.
Add the sausage, cook until browned, about 5 more minutes. Pour in the broth, bring to a simmer stirring often.
Using the small holes of a box grater, grate the potato into the soup. Still well while returning to a simmer. Cover, reduce the heat to low and simmer for 5 minutes stirring occasionally.
Stir in the Kale, cover and continue cooking stirring occasionally until the kale is tender, about 12 minutes. Stir in the salt, pepper and hot sauce before serving.
