Low Fat Mushroom Leek Frittata

1.5 Cups Egg Beaters or other egg substitute1 Cup Sliced Mushrooms1 Cup Sliced Leeks, cleaned1/2 Cup Reduced Fat Mozzarella Cheese, grated1/3 Cup Parmesan, finely grated1/5 Tbsp Smart Balance Lite Buttery Spreadsalt and pepper to taste
*make sure to use a stove-top and oven safe dish!*
saute leeks in smart balance until white parts are translucent. then add the mushrooms and cook until tender. add egg beaters and seasoning and cook until just under set, stirring occasionally.
sprinkle cheese over the top and transfer dish to a preheated, 350* oven for about 10 minutes, or until cheeses are golden brown.
serve along with radish hashborwns!
