Banana Oatmeal Muffins

2 1/2 cups oats, ground to flour consistency1 cup fat free Greek yogurt4 egg whites1/4 cup honey2 tsp baking powder2 Tbsp Splenda1 tsp baking soda2 Tbsp flax seed, ground1 tsp vanilla extract2 medium ripe bananas
1. Preheat oven to 350 degrees. Line a 12 cup muffin tin with paper liners and set aside.
2. In the bowl of a food processor, combine the oat flour, yogurt, Splenda, egg whites, honey, baking powder, baking soda, vanilla, bananas and flax seed and pulse until smooth. Pour batter evenly into the cupcake liners.
3. Bake for 18 - 20 minutes, or until toothpick inserted near the center comes out clean.
4. Remove from the oven and place the muffins on a wire rack. Allow to cool completely before serving.
