Pizza Stuffed Chicken Breasts

Ingredients
1 1/2 lb boneless skinless chicken breasts, pounded thinSalt & pepper, to taste1/2 tsp garlic powder1 tsp Italian blend seasoning1/2 cup fat free mozzarella cheese, shredded1/2 cup pizza sauce12 turkey pepperoni
Directions
1. Preheat oven to 375 degrees. Line a baking sheet with foil and spray lightly with cooking spray. Lay chicken on the prepared sheet.

2. In a large bowl, combine the cheese, 1/4 cup pizza sauce and seasonings and mix well.

3. Spread mixture evenly between the chicken breasts. Roll up and place seam side down on baking sheet. Pour remaining pizza sauce over the top of the chicken and place 3 pepperoni on top of each.

4. Bake 30 - 35 min, or until cooked through.

    This tasted great, but I'm taking off a star because the cook temp and time would lead to VERY dry chicken with my oven and the chicken breasts I use. I baked it at 425 for 18 minutes (I usually do 15, but added a few minutes since they were rolled up) and it was perfect. I use a meat thermometer. - 5/21/21
